I was very keen to try this recipe — it had a green label, it looked easy, and it ticked all my boxes: coconut, coriander, lentils… basically everything that makes a soup both cosy and actually filling. Because let’s be honest, some vegetable soups feel more like flavoured water. Not this one. This one properly fills you up.
It’s incredibly simple to make, packed with flavour, and the combination of lentils + coconut + tomatoes works somehow even better than it sounds. I also used an Asian lime this time, and it honestly transported me straight back to Asia — such a good addition.
It is an absolute banger and would give it a 9.5/10.
