Orzo with tomato and marinated feta (vegetarian version)

The last time I made this recipe was more than three years ago, back in the Netherlands. Let’s see what my friends (Anna, Rachel & Marketa) think of it this time. I can tell you they are brutally honest.

It doesn’t happen often that I like a recipe more than the friends I cook for, but here we are. We all have different tastes.

In terms of ease, I’d rate this recipe as medium. The base is fairly simple, but there are quite a few small steps, like frying the orzo first and then scooping it out of the pan, which make it a bit more involved than expected.

“6/10, feel like the Orzo could have been nicer with some more spices/herbs and vegetables.”

To make the recipe vegetarian, we swapped the prawns for spinach and added a few extra tomatoes.

“6/10. I liked it! Wasn’t sure about the orange skin but that might be just because i am not used to that. And thought the fennels in feta was interesting”

One thing we all agree on is that the fennel and feta combination is really good.

“7/10. The fetta was a great and I liked the fennel seeds I never usually have them. Though prefer risotto to Orzo.”

So, would I make this recipe again? Yes, I think I would, but with a few adjustments. I’d definitely add more vegetables and more spices. For me, it’s really the fennel and feta that make this recipe special.
