This recipe literally blew me away — or was it just the butter beans? I used beans from Bold Beans, and I’m not sure how they do it, but they tasted magically good. You could honestly eat them straight from the jar. Normally, beans are a bit mushy and don’t have much flavour, but these are not like that at all. (Not affiliated with the brand, by the way.)
The recipe itself is quite simple and straightforward, and it works really well as a big batch to use for the rest of the week. I really like that it uses preserved lemon they add a nice dimension to the dish. I didn’t fully follow the instructions for that — you’re supposed to use only the inner part and discard the skin, but I just cut the lemon and put it all in, and that was fine for me. I also didn’t use fresh tomatoes and went for tinned ones instead, which worked perfectly.
I generally think that is one of my favourite bean recipes and give it a 9/10.
