I can’t really think of a moment where I had mac ’n’ cheese or cauliflower cheese. I imagined it to be a bit bland and wasn’t that tempted to cook this recipe (therefore I labelled it with the pink label). But wow, this one completely blew me away.
The combination of cheese with cumin, curry and mustard seeds is just so good and gives such a twist compared to anything else I’ve ever made with cauliflower. And the green chillies give a bit of a kick to it. I’ve made it once with cream and once with milk (because we didn’t have any cream at home), and I can definitely say that cream works better for the consistency.
Best of all, it’s actually quite easy to make, definitely one of those recipes that changed my mind entirely.
