Roasted baby carrots with harissa and pomegranate

I made this recipe for my friend Laura this weekend. I was hoping the carrots would caramelise more, so I was a little disappointed, but I still really enjoyed it. I added extra feta to make it more filling.

Definitely don’t skip the pomegranate seeds (they’re on the ingredient list) — they add a great pop of freshness to the dish.

Overall, I’d give it a 7/10, as I really enjoy the taste. Maybe I’m a bit too critical of my own cooking creations, as Laura gave it an 8/10.
