Greens and chermoula potato pie

Don’t try this at home …

I’m honestly not really sure what I think of this recipe. It looked very simple and, to be fair, it wasn’t that difficult to make, but I wasn’t blown away by it and probably wouldn’t make it again. The taste was nice, just not amazing.

I did make the mistake of using a tart tin that was too big. Even though I used more spinach than the recipe suggested, it still definitely wasn’t enough. To fix that, I filled the other half with some extra mushrooms I had in the fridge and combined them with extra feta, lemon zest, and thyme. I have to say, that version turned out just as good, if not better, than the spinach one.

One thing I really did like was the chermoula, a sauce made with garlic, lemon, red chilli, cumin, paprika, coriander, and olive oil. That was probably my favourite part of the whole dish.
