UGH I HATE BAKING!!!!
[continues writing after a few deep breaths]
It actually wasn’t that bad, but I did manage to mix up two steps. I should have poured the batter in first and then added the apples. Which is exactly what I did. But then I convinced myself I’d done it wrong and tried to “fix” it. Only after it came out of the oven did I realise that I’d been right the first time. Classic.
That said, the cake still tasted good, so I’m choosing to see this as a win. I brought it to my Wednesday afternoon yoga class, which is a small community class with me and five retired women, and they absolutely loved it. They couldn’t stop telling me how good it was, which was honestly quite sweet.
“The pensioners in my yoga class absolutely loved it, and it was the perfect cake for a 4pm tea.”
I think part of my slight disappointment came from expecting something closer to a Dutch apple tart, when this is very much a cake. It’s really nice and moist, but for my taste it could have done with more apple. In the evening I brought this cake to my jury panel Anna, Rachel and Marketa and they absoloty loved it. The apple cake was more of a success than I thought

If I make it again, I’d definitely increase the apple-to-cake ratio.
