
Yay another cooking session with friends!! And again, some familiar faces on our judge panel.
The aubergine was done slightly quicker than we thought and was a bit burned. After scraping the top layer of the aubergines, they were good to go. Assembling the rest of the dish was quite easy by just putting everything in one big tray. We added some flatbread and hummus on the side to give it a bit more body.
“For a vegetarian recipe this is actually really good and give a it 9/10 (sorry would have been a 10/10 with meat”
I haven’t made this recipe that often but it really hits the perfect spot of being easy, tasty, and nutritious, and after making it I’m very keen to make it more often.
