Soba noodles with Avocado, Lime, Cardamom and Pistachios

This recipe has a very unusual combination of flavours. Soba noodles, avocado, cardamom, and pistachio are not something you see every day, yet it comes together really well. You do have to like cardamom for this one, but if you do (like me), it’s a fun and interesting dish.

Taste-wise, I’d give it a 7.5/10. It’s also very easy to assemble, although it took me ages to get the pistachio kernels out of their shells, and you need quite a lot of them. Because of that, I’d give it a 6/10 for effort (with 10 being a lot of effort).

Overall, I’d rate this recipe a 7/10. I’ve made it quite a few times now, and it’s especially nice when you’re in the mood for something a bit different.

    Maybe a bit more expensive, but buying peeled pistachios saves you a lot of time, definitely worth it!
