Squash, celery and corn salad with feta, caraway seeds and chillies

A slightly different post today, as I will be writing about my own creation I came up with during my frist voluntering shift at Foodcycle. Foodcycle brings people together by serving free, wholesome meals made from food that would have gone to waste. They cook with left-over vegetables donated by supermarkets, so a win-win.

Seeing the big piles of veggies and the assignment to make a nutritious and tasty meal for 40 people in 1.5 hours, give me Master Chef vibes, but challenge accepted.

It was my job to make the starter and with lots of butternut squash, cellary and corn, I thought of a Mexican-inspired salad. They had limited spices, so was bound to use caraway seeds and chillie flakes.

So what was the final verdict?

The chillies definitely added a kick and if you can’t handle spice it might not have been for you. However, we finished all the food and people even requested some more. This lady even came to the kitchen asking for the recipe and according to the head chef, this has not happened to him since he has been doing this. Will take that Hehe.

Would I make this again? If those were the ingredients in my kitchen, absolutely. But can’t recommend it for 40 people.
